After careful vineyard work, comes the long awaited moment of harvest, running September. The grapes are harvested manually, then pressed and the juice stored in tanks.

After a few days, the first alcoholic fermentation begins
(conversion of sugar into alcohol) It takes about 15 days.
The wines are then in vats until our assemblies for bottling.

The transformation of wine Champagne is done through the
Second fermentation which will take about three months.
